Ingredients:

Besan   1/2 cup
Spinach   8-10 leaves
Green Chillies   2 finely chopped
Ginger   grated 1 inch
Turmeric powder   1/4 teaspoon
Red chilly powder   1/4 teaspoon
Eno fruit salt   1 teaspoon
Oil   1 teaspoon
Sugar   1 teaspoon
Oil   2 teaspoon
Salt to taste
Juice   1 lemon
 
For tempering:
 
Mustard seeds   1/2 teaspoon
Green chillies   2
Oil   1 teaspoon
 

Method:

  • In a bowl, mix besan, chopped spinach, green chillies, ginger, spice powders, sugar, and salt to taste. Add water and make a smooth batter using about 1/2 cup water for 1 cup besan. Add the one teaspoon of oil and mix well.
  • Heat 1 cup of water in the cooker and place a vessel with some water in it. Smear the vessel with oil to grease it. When the water is about to boil, add Eno fruit salt to the batter and stir thoroughly. The mixture will become a little bubbly.Pour the batter into the greased vessel and place above the vessel with water in the cooker.
  • Cover with a lid. Steam in the cooker on medium heat without a whistle. Cook for about 15-20 minutes or till a fork/toothpick comes out clean .Remove from the cooker and cut into pieces.
  • For the tempering, heat the oil in a small pan and add the mustard seeds. Fry till they pop. Add green chillies and turn off the heat and allow to sauté for a few seconds. Add about 2 tablespoons of water and the juice of 1 lemon to this tempering. Mix well. Pour this tempering, water, and lemon mixture over the dhoklas and allow them to soak the liquid for 2 minutes. Remove the dhoklas on to a plate and serve.
