Ingredients: |
| Guava |

500 g |
| Citric acid |

1/2 tsp |
| Sugar |

according to pectin content |

Method: |
- Wash guavas and cut into thin round slices.
- Add citric acid and boil for some time.
- Strain through a muslin cloth without pressing.
- Cook the guava pieces twice again in water and take out the extract in similar manner.
- Test the amount of pectin in the extract by the spirit test.
- If the pectin content is good, add 3/4 cup of sugar for every cup of extract.
- Cook without formation of foam. Till jelly is done as tested by the sheet test.
- Pour hot jelly in clean, sterilized bottles and let cool covered with a clean cloth.
- Pour lid, seal with wax and keep in a cool place.
