Method: |
- Select red, ripe tomatoes, wash and cut into pieces.
- Chop onion, ginger and garlic.
- Tie the whole spices in a muslin cloth.
- Cook tomatoes, onion, ginger and garlic with the bag of whole spices till tender.
- Discard bag of spices. Mix in the blender and pass through a sieve.
- Add sugar to the above tomato puree and cook till thick.
- Add salt, red chilly powder and cook till done (check by the plate test).
- Remove from fire, add glacial acetic acid and sodium benzoate dissolved in a little water.
- Fill hot sauce in a sterilized bottle and close properly.
