Ingredients: |
| Boneless, skinless chicken breasts, halved |
|
200 g |
| Butter, melted |

2 tsp |
| Salt |

1/2 tsp |
| Freshly ground pepper |
| Flour |

2 tbsp |
| Dry mustard |

1/4 tsp |
| Cinnamon |

1/2 tsp |
| Ground ginger |

| Orange juice, boiling |

Method: |
- Preheat oven to 375 degrees.
- Place chicken breasts in baking dish.
- Brush with melted butter.
- Sprinkle with salt and pepper. Bake 15 minutes, uncovered.
- Put remaining butter in small saucepan.
- Add flour, salt, mustard, cinnamon, and ginger.
- Cook, stirring for 2 to 3 minutes
- Remove from heat and pour on boiling orange juice, beating vigorously with a wire whisk.
- Cook, stirring, 5 minutes or until thickened
- Pour over chicken and bake another 15 minutes.
- Set oven to broil and brown chicken for 2 to 3 minutes before serving.
