Method: |
- Over medium heat, add carrots, tomatoes to a large pot of water.
- Bring to a rolling boil, reduce to a simmer for 90 min.
- In a separate pan, stir fry onions, until brown.
- Add the kidney bean & potatoes.
- Cook until the potatoes are tender (20 minutes ).
- Simmer for around 5 minutes.
- Garnish with spring onions,capsicum, tomatoes.
- Add salt & pepper.
