Method: |
- Cut zucchini in half lengthwise, then each half into thirds crosswise.
- Heat oil in a pan. Add zucchini, cut side down and cook until lightly browned.
- Add onion and seasonings. Top with tomatoes.
- Cover and cook over medium heat until squash and onion are tender and sauce slightly thickened.
